Wash and dry all produce. Halve, peel, and chop @red onion{2}. Mince or grate @garlic{4%clove}. Finely chop @cilantro{½%ounce}, reserving a few leaves for garnish. Chop @jalapeno{2}. If you prefer less heat, remove ribs and seeds.

In a small #pot{}, bring @water{1%cup} and a large pinch of @salt{} to a boil. Once boiling, add @basmati rice{1%cup}, cover, and reduce to a low simmer for ~{15-20%minutes}, until tender.

Heat a large drizzle of @olive oil{2%tbsp} in a #large pan{} over medium heat. Add @mustard seeds{2%tsp} and cook until fragrant, about ~{1%minute}. Add @curry powder{1%tsp}, @turmeric{2%tsp}, half of the jalapeño pepper, and the onion. Cook for 2-3 minutes until slightly brown. Add garlic and cilantro and cook for ~{30%seconds}, until fragrant. Season with salt and pepper.

Add @crushed tomatoes{2%box}, half the @coconut milk{1%can}, @water{1%cup}, and a pinch of @cayenne pepper{1%tsp}. Season with salt and pepper, then bring to a boil.

Add @shrimp{20%ounce} to the pan and reduce the heat to low. Cook for 4-5 minutes until shrimp are opaque and cooked through, ~{4-5%minutes}. Season to taste with salt, pepper, and additional cayenne, if desired.

Stir @garam masala{2%tsp} into the pan and remove from the heat. Serve the South Indian shrimp curry over basmati rice and garnish with the reserved cilantro leaves. Enjoy!
